うなぎの刺身をあまり見ない理由

刺身が大好きな人でも、うなぎの刺身を
お店で並べられているのを見たことある人はあまりいないのではないでしょうか？
では、なぜうなぎの刺身はあまり見ないのでしょうか？
実はうなぎは・・・
うなぎは毒を持っているから。
実はうなぎの血中には「イクシオトキシン」という毒が含まれています。
この毒を口に入れると、下痢や吐き気などの中毒症状を引き起こしたり
目に入った場合は結膜炎になったり、傷口に入ると炎症を引き起こします。
また、大量に食べると死亡することもあります。
しかし、身を丁寧に洗って血を取り除けば、刺身でも食べられない事はありません。

ウナギの蒲焼があるけど？
うなぎの毒は熱に弱い。
うなぎの血には毒があるのに、蒲焼を食べても問題ない理由は
うなぎの毒は熱に弱いため、焼いたり煮たりすると大丈夫なのです。
このような理由から、一般的には蒲焼や白焼きにして食べられており
刺身はあまり見かけないのです。
